Paleo Granola

Crunchy, Earthy and chocolaty. This granola is packed with fiber and healthy fats to keep you satisfied for longer. 

My favourite way to serve this is with almond milk, fruit of your choice, coconut yogurt and a generous sprinkle of cinnamon.

Ingredients:

200g roughly chopped Almonds

200g roughly chopped Brazil Nuts

100g roughly chopped Cashews
300g mixed Nuts and Seeds - e.g. linseed, sunflower seeds, pumpkin seeds, sesame seeds, chia seeds

1 cup roughly chopped Dates

2 cups Coconut Flakes

2 tsp Vanilla Extract

1/4 tsp Salt

1/4 cup Cocoa Powder

1 Tbsp melted Coconut Oil (optional)

Method:

Preheat the oven to 140 C.
Add all the ingredients into a large bowl and mix together until thoroughly combined.
Spread evenly over a lined baking tray and bake for 40 minutes, making sure to mix the granola every 10 minutes.

Notes:

  • I like to keep my granola stored in an airtight container in the fridge for that extra crunch when serving. Plus, this way it keeps for longer.

  • If you’re looking for some extra sweet, chocolaty-ness, try drizzling a little bit of my Choccy Sauce over the top.
